Icing sugar (also known as powdered or confectioners' sugar) is made from just two ingredients: finely milled granulated white cane sugar and a small amount of anti-caking agent, typically 3% cornstarch. The cornstarch prevents the ultra-fine sugar particles from clumping together and absorbing moisture.
